Good Monday morning, friends! I hope you had a relaxing weekend! I’m starting this week off with another fabulous Trim Healthy Mama dish. I have made this Giant Blueberry Baked Pancake several times over the last two weeks and have eaten it for breakfast, lunch and dinner meals. It is delicious! I usually add fresh blueberries to the top and homemade sugar free syrup…mmmmm!
It is considered an E meal – energizing! It is easy to make and I had not tried it because it had cottage cheese in it… As much as I like cottage cheese, I couldn’t imagine putting it in a recipe to bake…well, I was wrong. This giant pancake is delicious! There is enough in the 9×13 pan for six generous servings!
