Good morning!!! I hope you had a wonderful weekend! Saturday was a cleaning day for me- except when The Salesman had an appointment at 12:30, I ran to the gym for a quick work out. Sunday was mostly a day of rest with church and a fun outing to Knoxville and catching up with a friend on the phone.
Routine starts back today.
I am so excited to share that I purchased the new Trim Healthy Mama cookbook called The Trim Healthy Table! I just got it back from Office Max, where I had it spiral bound and have started trying out the recipes. The first one that I tried was on page 219 and is a family serve S dish called Creamed Spinach and Bacon-Smothered Chicken. I thought I had all the ingredients to make the dish, especially the ingredients named in the title… However, I did not have spinach and used some fresh kale that my friend Janene had shared with me from her garden and it was wonderful.
Since this is a family serve, we will probably get three meals from this one dish. It is tasty and relatively easy to make. I served it with a side salad, cooked cabbage and mashed fotatoes. Yum. Thumbs up from The Salesman. Thumbs up from me.
