Good morning, friends! Happy Monday! How are you this fine morning? I hope you are well. If your week is busy, I would suggest this Trim Healthy Mama recipe for a quick and delicious dinner. Before Trim Healthy Mama, I always considered Salmon as a quick go to meal, and this recipe adds so much flavor. I have made it several times and will continue to keep it in recipe rotation. Not that I have a specific rotation of recipes per se; but, I am trying many new ones and this one will be a staple.
Crispy Salmon Siesta is on page 80 of the original Trim Healthy Mama cookbook. It is considered an S meal for satisfying and is a written for a single serve. I usually make three to four fillets in the skillet at a time. The Salesman will eat this dish and be ok with it; but he is not a seafood lover – unless it is shrimp!
The dish is paired with yellow squash in the recipe, and I also added a side of purple cabbage and garnished with cilantro. Yum!
