Trim Healthy Mama Deconstructed Fajitas are a tried and true recipe in my Trim Healthy Mama kitchen.  Fajitas are have long been a favorite around here.  In fact, the last time I made the THM Deconstructed Fajitas, we had them for lunch and The Salesman decided we should have our dinner out, and guess what he picked?!? You got it –  Mexican!

Recipe:  Deconstructed Fajitas 
Serving:  Family Serve – Feeds 6 to 8, halve ingredients if your family is smaller or make full and freeze half

Fuel: FP – Fuel Pull with S – Satisfying and E- Energizing options


The Trim Healthy Mamas were spot on placing Deconstructed Fajitas in the Speedy Skillet Meals chapter. I have to agree, it was quick to put together.  When I looked at the long ingredient list, I was a bit skeptical; but it went together quickly and I would definitely make them again. 

There were two options given, that when utilized, truly made for speedy meal preparation:

1.  I used a bag of the frozen seasoning blend instead of chopping onions and green or red peppers.  

2.  I used the diced tomatoes in a can instead of slicing fresh tomatoes.  

Then, the fact I also had just picked up and processed forty pounds of chicken and had the breasts ready to add to the skillet, was a super big plus.  


When I read the long list of ingredients closely, most were seasonings to flavor the fajitas, and then there was a list of optional topping items for the different fuels.  There are three options for the fuel source for this dish: fuel pull, satisfying or energizing.  And having the list of what to add for each fuel type was so helpful!  Not having to look anything up or wonder what goes with what fuel was a big score for the Trim Healthy Mamas because it is all right on the recipe page.

I fixed brown rice to serve it to The Salesman, so his was an energizing meal, and I did the satisfying option with sour cream and a sprinkling of cheese.  I served both of our main dishes over lettuce.  The Salesman asked for seconds. Yes, he did!
