Trim Healthy Mama Pumpkin BAM Cake

Good morning, friends!!! How are you? And how was your Thanksgiving holiday? I hope it was wonder filled!  We had company from Africa last week for six days and the morning he left, we jetted out to St. Louis for six days!  It was a fabulous trip! Our oldest daughter, Audra and her husband, met us in St. Louis and we had a good time visiting with family and friends and sightseeing and relaxing. 
We are blessed.  So blessed. 
I packed many Trim Healthy Mama snacks and desserts for the trip.  I took along fruit and the Chocolate Moisties and the Trimastic Pumpkin Cake and the pictured Pumpkin BAM Cake.
This recipe is found in the Cake chapter on page 385 of the Trim Healthy Table cookbook.  It is an E (energizing) recipe and is a multiple serve.  I sliced the cake in twelve pieces.  It is a variation on the original BAM cake.  It was ok.  I prefer the pumpkin version of the Trimtastic Cake personally and the original BAM cake.  I did not make the glosting or the cake – with company and work, I decided to not make just the cake.  The recipe was easy to follow and the cake has a good texture and flavor.  The Salesman did not try this one.  I will probably try some of the other versions of the BAM cake the next time, I get a hankering for an E cake.
This cake traveled well! I put pieces in sandwich size baggies and mostly enjoyed them for a breakfast meal while The Salesman was enjoying homemade cinnamon rolls made in two different varieties!  Thank you Judy!!!
Do you ever travel or pack your THM food? I do quite often.  Whether it is a short trip to a nearby big city or a long trip, I certainly do take my healthier options along. If I’m traveling locally, I usually take a small cooler along. Our Thanksgiving trip included a 9×13 baking pan, a 9×9 pan and small glass dish to put an individual serving in to carry in my Mary Poppins bag for wherever the days travels took us.  I like to be prepared.  On Thanksgiving day, the dessert table at our hosts house was amazing – so many options and varieties. I was able to say no, knowing that I could say yes to my own Sugar-Free-Gluten-Free-But-Not-Taste-Free-Foods.
