We are finding our new normal without my family again this Christmas. We made some fun plans though, and I’ll have lots of pictures to share with you soon. I pray you are blessed to the brim today!
I am sharing a recipe from the Trim Healthy Mama Trim Healthy Table Cookbook. You will find this recipe on page 126 of the Comforting Casseroles and Bakes chapter. It is a No Special Ingredients recipe and was very easy to put together, the steps of the recipe were clear and easy to follow.
And, the base of the casserole is my current favorite vegetable: cauliflower! The recipe calls for riced cauliflower and I want you to know, that all I did was take my bags of frozen cauliflower and rice them in the blender… Yes, that was it. And then I added the riced cauliflower directly from the blender to the bowl with the other ingredients and it worked beautifully. It made a fabulous crust for the pizza!
The recipe called for mild, medium or hot Italian-style sausage meat and I’m sure that would have been scrumptious; but remember that I’ve given up pork products? The sister’s used turkey; but I found chicken breakfast sausage at Aldi and me, oh my, it was great in this casserole! And I did take their suggestion for using turkey pepperoni, and it was really good. I bought the turkey pepperoni at Aldi, along with the sauce. Aldi has become my favorite place to shop in town.
I served this Easy Pizza Casserole with a spinach salad.
And it is Salesman approved!!! He really like it and asked for more! I will be making this recipe again.
