In the original Trim Healthy Mama cookbook, there was a recipe for Lazy Lasagna and this recipe is a twist on the original recipe; but uses chicken and a white sauce.
The Lazy Chicken Lasagna is an S (satisfying) meal and is found on page 124 of the Comforting Casseroles and Bakes chapter. It is also a NSI (no special ingredients) recipe. It is a family serve and made eight servings for us in a 9 x 13 inch pan.
Lasagna, to me, is usually an involved process dish, and this one isn’t as involved as my normal lasagna recipe; but it does take time to make. I used fresh spinach verses the frozen spinach option, and cooked chicken breast verses rotisserie chicken. I also used the almond milk option, verses the cashew milk.

I plated it and served it with fresh vegetables, green beans and mushrooms. We had plenty of leftovers!
