This week’s recipe review is from the Comforting Casseroles and Bakes chapter of the new Trim Healthy Table Cookbook. Taco Pie is an S (satisfying meal) and is a family serve. It was eight servings for us in a 9 x 13 pan. It is also a NSI (no special ingredients meal). Here it is hot out of the oven:
In the original Trim Healthy Mama cookbook, there was a recipe for Cheeseburger Pie (which I really liked) and the Taco Pie is a “twist” on that recipe. I’ve made the Cheeseburger Pie several times and was really looking forward to trying this Taco Pie. Look at how delicious this looks:
Like the Cheeseburger Pie, it was an easy recipe to follow.
And it certainly looked delicious! Having an appealing looking dish is important; but we all want the taste and flavor to be satisfying as well.
I served it with a side salad of butter lettuce for me, and The Salesman also ate tortilla chips with his; but both of us rated it as ok. The Taco Pie seemed like it needed something else to me. If I try it again, I will add onions, peppers, and chopped garlic to the recipe before baking. I might add fresh tomatoes and sour cream when serving, as well.
