Good morning, mama’s!!! Happy start to a new week! How was your weekend? Did you relax? I hope so!!!
Today I am reviewing a recipe from the Oven Baked Meats and Fish chapter of the new Trim Healthy Table cookbook. Creamed Spinach and Bacon Smothered Chicken is on page 219 and is a S (satisfying) meal and calls for NSI (no special ingredients). It is a family serve, which by the Trim Healthy Table guide means 6 – 8 servings. It would be 8 servings for me, because I eat less; but it would be 4 servings for my husband, The Salesman, because he eats more.
The recipe was easy to follow with just four easy steps.
As you already know, I like kale and spinach and salad greens, oh my! And this recipe includes one of my favorites, spinach. In the first picture, I am wilting the spinach using the same pan that I used for frying the turkey bacon. Of course you could use regular bacon; but I’ve decided to give up pork, so, turkey bacon is my choice.
Step two of the recipe includes adding the bacon back to the pan.
Step three was very simple: flatten the chicken, season, and add the sauce, then cheese. I used mozzarella and parmesan:
And after baking, doesn’t this look delicious?!? Seriously, look at the size of the servings! I used two chicken breasts and cut each one in half. To share how this works out to servings at our home, I eat half of one of these halves and am very full. The Salesman eats an entire half of half a breast (along with several sides) and is full.
Here is The Salesman’s portion plated with Mashed Fotatoes and lima beans. I think I have shared with you my like of the mashed fotatoes… My plate had only mashed fotatoes and chicken on it and I was happy.
