Today I am sharing the first review of a crock pot recipe in the new Trim Healthy Mama cookbook. You will find it on page 78 in the Sanity Saving Crockpot and Electric Pressure Cooker Meals chapter. The Chili is an S (satisfying) meal and is also a NSI (no special ingredients) recipe.
I prepped the Creamy Verde Chicken Chili recipe on a cold Saturday evening so that I could put it in the crockpot quickly on Sunday before going to church. It is a family serve recipe and if family serve in the Trim Healthy Mama world means 6-8 servings, this was a very generous 8 servings. I would estimate it is more along the lines of 10-12 servings. My crockpot was full and we had it for four days, plus shared with a friend.
And so you know up front, it is Salesman approved! He liked this soup! I will be making it again! He did ask for butter crackers to eat with his chili.
I had never purchased salsa verde, have you? It is a green salsa. I purchased the mild version of salsa; but thought the chili was very flavorful. Of course you could use the medium or hot, if you prefer. The chili is full of vegetables and also has two secret veggies added as well.
There is also an option for making this chili in an electric pressure cooker.
The recipe was very easy to follow and had three steps. I prepped the second step the night before which was blending some of the ingredients and the secret veggies! I also had the crockpot, all canned ingredients and spices, and all measuring spoons out, so that the Sunday morning assembly went quickly.
