Good morning! Happy start of the week to you! I hope you had a relaxing weekend! I don’t know that I’d categorize my weekend as relaxing; but it was good and productive! I do hope that you had a good weekend too.
I feel like starting off this post with the sound of a bell ringing and the words:
Winner, winner, chicken dinner!
The Salesman really liked this dish and even told a family member about how good it was! So, yes, I will be making this casserole again. The Creamy Mushroom Chicken Casserole is a satisfying meal from page 141 of the Comforting Casseroles and Bakes chapter in the new Trim Healthy Table cookbook. It is a family serve, which means it feeds 6-8 people. It is also a no special ingredients recipe.
As I was in the third step of the recipe, browning the chicken, our painter commented on how good it smelled. He also tried the finished dish and liked it as well. This recipe gave the option of using butter or coconut oil, and I used butter.
This recipe had five easy steps. Here are all the ingredients in the pan, ready to go into the oven.
And here is the tasty casserole, hot out of the oven. Can you smell the mushrooms and onions? Yum!

Now that I see the plated picture, I must share that I did not add the Gluccie to the recipe and that is the reason you see a good bit of liquid on the plate. Even without the Gluccie, this recipe is a winner!
Not every Trim Healthy Mama dish that I makes gets a two thumbs up; but this one does!
