Good start of the week to you! I hope you had a restful and wonder filled weekend! The play opened this weekend and it was a full and busy one at our home with family visiting and rehearsing lines and getting hair and make-up done and soaking up every bit of family time that we had.
I’m sharing a recipe from the new Trim Healthy Table cookbook called Cabbage Roll in a Bowl. It is a FP (fuel pull) with an S (satisfying) option. This dish is a family serve meal and is said to freeze well. You will find it on page 57 of the Speedy Skillet Meals chapter. And it is dairy free and no special ingredients.
I made the meal as a fuel pull and it was okay. It was better the second day after all the flavors married and marinated. Pretty certain that I have shared that I am enjoying cabbage in this current season. There are so many health benefits of cabbage. I try to choose recipes that include this nutritious veggie.
Do you like cabbage? Have you ever made stuffed cabbage rolls? This recipe is way easier than making stuffed cabbage rolls. I would recommend it; but, the next time I make it, I plan to make it as a Satisfying dish and use a little more coconut oil.
