Trim Healthy Mama Trimtastic Chocolate Zucchini Cake Review

I have referenced this cake in so many posts; but just realized, that I’ve not done a review! This is the very first dessert that my oldest darlin’ daughter, Audra Elizabeth, introduced me to Trim Healthy Mama with. If you are going to introduce someone to a sugar-free, gluten-free dessert, this is a good one! Tasty!!! Your sugar free taste buds will be doing dances over this cake! I have made it many times over the past, almost two years, that I had many pictures to share with you! There is currently one in the refrigerator right now. The Salesman likes it with the icing the recipe calls for. Before his diabetes diagnosis, I always liked to top it with fresh berries.

I normally make it in a square cake pan as the recipe calls for, and my square pan has a lid, so it is convenient to store in the refrigerator:

And it was requested that I make one for a baby shower that I hosted. This shower brings back such good memories. I have the best friends! I think the cake was the only *thing* that I did for the shower. Friends arrived early, and did all the set up, brought all the decor and stayed and helped with the clean up.

I had to include this picture because it was a better view of the baby shower cake and just look at the gorgeous mama-to-be. Serious beauty. And she is the best mama now, too. The trimtastic cake pictured below is topped with blackberries and blueberries. And I’m not sure who has just served themselves with a teeny-tiny piece; but usually, people come back for more! Some are skeptical of a dessert being sugar-free.
