Trim Healthy Mama Wacha Want Mexican Chicken Review

When you are given an overabundance of tomatoes from your father-in-love, you generously share with your friends, enjoy fresh tomato sandwiches (with Duke’s mayo) and make marinara sauce! The Salesman’s dad has shared so many gems of gold from his garden this summer, that I started looking for something new to make.  While scrolling through Facebook, I saw a friend’s post about how she had made salsa, so I messaged her, was in her office later in the week, and she shared the recipe for her salsa, and I made my first batch!

It was super easy! First I added the tomatoes to my Dutch oven, then the chopped onions:

Then add chopped green peppers and diced, fresh peeled garlic:

I added fresh cilantro.  This was not a part of my friends recipe; but I thought the salsa should have some!

Then add a package of Mrs. Wages mild salsa mix and just a bit of white vinegar.

Then I also added some fresh lime juice:

The recipe made about a dozen jars of salsa!!! My jars were hot from the dishwasher and for some odd reason, worked in the kitchen, or close-by, till they sealed.

I had a few jars that did not seal, so I knew what I was going to make with the jars – Salsa chicken!!! Or as Trim Healthy Mama calls it:

Wacha Want Mexican Chicken, and here are the details:

This Trim Healthy Mama Recipe is the easiest one ever!  And it is also one of those crockpot meals that you have absolutely no preparation for the food before putting it in the crockpot.  I’ve used Salsa Chicken as my go-to crockpot meal over the years.  If the girls had soccer practice after school, this was so easy to put on in the morning and be ready by dinner time.  We would serve it with lettuce, cheese, sour cream, peppers, etc.  When hosting a crowd, I’d make a mixed green salad and a large dutch oven of brown rice and it would usually all be gone!

And this recipe is endorsed by The Salesman, with a thumbs up!  He asked for seconds.  I served his over brown rice, so it was an E meal for him.  I ate mine with grated cheese and sour cream, so mine was an S meal.
