Happy Valentine’s Week Mama’s!
Where has the time gone? I did not plan to press the pause button for so long before returning to a somewhat normal routine around here; but, Victoria Leigh moved to China at the end of January and needless-to-say, we had busy days getting her ready to move, and then we intentionally spent time together going and doing all the things we wanted to do together before she sailed away to China.
Yes, China.
Victoria is living out her dreams, and there is no one more happy for her, or misses her more, than me.
So, we did art museums together, we visited botanic gardens, we sat and drank hot tea together at 60 Beans, made several road trips, we meandered through thrift stores that we needed nothing from, but enjoyed being together. We grocery shopped, made dishes together in the kitchen, sat at the dining table and enjoyed the food and company, worked out together, watched movies together, discussed important and needful things, made trips to the Chinese Embassy, and then made visits to say her so longs, and also made a visit to say good by to her great grandmother. Oh, that one was precious, and hard, at the same time.
The days were full. And now, my heart is full. Victoria is a brave young woman and I am so very proud of her. I am thankful that she moved home for three months. It was an unexpected and blessed season for me.
I’ll share more about Victoria’s adventure later; but for today, we have another winning recipe for a delicious chicken dinner! Seriously Mama’s, make this recipe. It is Salesman approved, too! I will definitely be making this one again. It is absolutely fantastic!

This was an easy, three step recipe with the spices adding the perfect flavor to the chicken tenders:
My only complaint with this recipe is the amount of egg mixture and breading still left after the breading process is complete. The recipe called for 3 pounds of chicken tenderloins, so I cut the breasts I had into tenderloins and coated each piece really well. The baking blend is a precious commodity to me, and it was very difficult to throw away the remainder of the mixture. I did throw it away though since it had the eggs and the raw chicken dredged through the breading mixture. It may be hard to tell from this picture the amount of breading left; but, next time I will probably fourth the breading mixture. Yes, fourth it. And, I will half the egg mix too. Why fourth on one and half on the other? Good question. It is because the egg mixture because it calls for 2 eggs, and I’m not sure that I could fourth it, so, I will settle for half.
The rest of the recipe instructions were right on, and once I got over throwing away all the baking blend, the last step went quickly. I enjoyed using my mom’s iron skillet to skillet-fry the tenders. Options were given for air-frying or oven-frying.
The tenders browned evenly and smelled oh, so good while frying.
And then I could understand why the sisters named them the Snatch ‘Em Up Chicken Tenders, because, well, that is what I wanted to do.
And The Salesman liked them! It’s an easy-peasy recipe and delicious! It paired well with a mixed green salad.
