No one has ever had to tell me to eat my veggies. Growing up out in the country, my dear dad planted a garden big enough to supply an army. The food that came from his labor of love, was always delicious. As a young child, I helped weed the garden, pick the produce, and prepare it for freezing. So much of my childhood is wrapped in memories of love that were plowed, picked, and prepared from our garden, then enjoyed as a family around the table.
I really enjoy vegetables. When I discovered the Trim Healthy Mama Roasted NonStarchies recipe, I was willing, and ready, to test the vegetables. The first decision to make with this recipe is simply:
What non-starchy vegetables to do you want to roast?
I usually stock up on vegetables at Aldi, or other markets, so I usually have a variety of zucchini and squash, eggplant, fresh mushrooms, beets, peppers, cauliflower, etc. Sometimes it is just fun to put together the combination of vegetables that is in my crisper. You can pick one, or many, it is up to you!
Many of my friends enjoy vegetables, and graciously share them with us! One morning, I was blessed to look out on the back porch and see four boxes full of garden vegetables from the efforts of a friends garden.

The recipe is super easy – two steps – and the first one is to pre-heat the oven! This pan is already in the oven. The recipe calls for cheese: but, I very seldom add the cheese. I just don’t think these veggies need any cheese.

Many days for lunch I roast a pan of vegetables and eat them in half a pita. This is my current favorite lunch. On the lunch day pictured below, Victoria roasted eggplant separately and topped it with an artsy shaving of cheese.
