Summer can be summed up in delicious garden vegetables from my father-in-law’s garden.
Namely, the tomato.
One of my favorite seasonal sandwiches is a garden tomato sandwich. It is light, flavorful, and so simple to make. A garden tomato is one of my joys of the season. Anyone else out there enjoy a tomato sandwich? Do you have a favorite variety of tomato? Or do you enjoy a particular brand of mayonnaise on your sandwich? I smear Dukes mayonnaise on two pieces of slightly toasted Ezekiel bread, then insert medium-to-thick slices of garden tomatoes in abundance. Now, don’t be skimpy in the stacking of your tomatoes so that every inch of your bread is covered. A little side note of funny: a relative once colorfully told my mother to not slice the tomatoes so you could read the newspaper through them! I’m almost certain that back in those days my mother did not have what I now consider a necessity for slicing a tomato: a Williams Sonoma tomato knife. Seriously, if you enjoy tomatoes as much as I do, getting a tomato knife is a necessity.
To finish off my garden tomato sandwich, I add a sprinkling of mineral salt and ground black pepper, and then you have one of the tastiest delights of summer.
No cookbook necessary.
