Is it even possible to separate the ever popular cartoon character, Popeye, and spinach? Popeye the sailor man got his strength from eating his spinach and Trim Healthy Mama, if you are needing a boost of strength, Popeye’s Power Soup is for you!

Leafy green spinach is an excellent source of fiber, vitamins, and minerals. Like kale, I think of spinach as a powerhouse of nutrition.  Spinach is high in vitamin K1.  I remember this fact easily because it was one vegetable I had to monitor for my dad’s diet because his intake of vitamin K affected his warfarin therapy.

Mamas, here are all the details for finding the recipe for this nutrient dense soup:

Cookbook:  Trim Healthy Mama Cookbook
Chapter:  Family Soups
Recipe:  Popeye’s Power Soup
Serving:  Family Serve – Feeds 6-8
Fuel: FP – Fuel Pull

I garnished my bowl with a generous sifting of turmeric and fresh grated parmesan cheese. There are many serving ideas, such as  adding:

Cooked and shredded chicken
Integral Collagen
Light-rye Wasa crackers

I made this soup and shared with a friend who was recovering from an illness, and he really liked it.  The Salesman is not a fan of the soup. But, Popeye’s Power Soup is healthy, tasty, and easy to make.

Eat some, and then maybe check to see if your muscles are bulging like Popeye’s!
