As we head into the cooler months and don’t have as many fresh fruits at the market, you may be looking for a recipe that calls for frozen fruit. If you like chocolate and cherries and are wanting a delicious muffin to start off your morning, the Trim Healthy Mama Chocolate Covered Cherry Muffins recipe is for you. Most of us like chocolate and the combination with delightful cherries in this muffin is perfect. Then you add a dose of Trim Healthy Mama to the mix, and you have a tasty breakfast or dessert.
We are a bit familiar with cherries because we have researched the benefits of them in relation to gout. Cherries are sweet and meaty and tart and delicious, but there are many health benefits too. Here are a few:

Mamas, this recipe made a wonderful smelling, delicious tasting muffin. The recipe itself was simple and very easy to follow. It is categorized as an NSI: No Special Ingredient recipe and also has a dairy-free option. I did use dairy in my muffins in the form of 0% Greek yogurt. I have made this recipe twice, and each time, it made more than the slated 12 muffins. I have had 18 each time. I am not complaining; they are really good. It’s also so convenient to store them in a clear box in the refrigerator and grab one or two for breakfast. I usually split them and smear them with a small amount of ghee or butter and sometimes serve a small side of yogurt with them. Yum. Thumbs up from me. The Salesman tried them once. I do believe I will be the lucky recipient of the rest of them. His loss is my gain.
The recipe calls for frozen pitted cherries. I found organic frozen pitted cherries at our local Walmart. Since there was only a small amount to process, I decided to use the mini chopper Victoria Leigh gave me. It worked great and clean-up was easy.
This picture is just so you can have a good idea of the size of the cherries once they are broken down into smaller pieces. You don’t want your frozen cherries to be mushy.
Be sure to mix your cherries thoroughly into the batter. Don’t leave them in a clump on the center of your baking cups. The batter was tasty too.
