Trim Healthy Mama (but make it Audra style)

When Mom told me she was going to be out of the country and wanted me to take care of the blog while she was gone, she (of course) included instructions that included posts regarding Trim Healthy Mama, the eating plan I introduced her to four years ago. Life looks a lot different for me than it did then, though. Because of my divorce last year, I moved to Nashville and bought my own house. I also changed jobs (and industries), but still work the typically late hours I used to (and that Mom remembers). The difference is that I no longer come home and cook meals at 8 p.m. (or later) like I used to ๐Ÿ˜‚ (though I still do typically go to the grocery store almost every day – some things never change ๐Ÿ˜‚).

Part of the charm of a metro area for me is the many options when it comes to food – and if you haven’t been to Nashville, there are a lot of great options. I haven’t quite mastered the art of cooking for one. Paired with working so much, take out and delivery have been a staple for me, as have freezer meals (I am not making my life sound great at all, but I swear I love it – most of the time).

I do enjoy cooking, despite my lack of doing so for myself. I’m also not quite as much of a planner as Mom is in most areas of her life, so while I really thought I would actually do what Mom does and make a recipe from the cookbook, I ended up winging it like some of us have to out of necessity. Let’s be real, the best-laid plans don’t always work out anyway (just ask me haha).

Anyway, after a particularly hard day at work, I went looking through my fridge and freezer and landed with these three:

The chicken I got during my trip to Publix yesterday; honestly, I hadn’t realized just how much they had there that makes a very quick to assemble meal
We really don’t have to talk about how long this has been in my freezer, but shout out to Aldi for reasonably priced frozen veggies that make this girl that halfway attempts to eat healthily so very happy

For the last part of this meal, I pulled out some leftover alfredo and reheated it on the stovetop thinking that I could top the chicken and vegetables with this to complete an S meal.
In all honesty, this meal didn’t actually need the alfredo, but as someone that absolutely adores it, I definitely appreciated the addition to the chicken and veggies. I didn’t get a picture of my meal with the alfredo, but I did feel super millenial taking a picture of my meal at this step, so that counts for something, right?
I honestly wasn’t expecting much from this meal regarding taste, but the chicken reminded me of a meal an old family member used to make and was pretty close to the real deal for me. The veggies were also surprisingly really great by themselves. For a meal that I was expecting to not love, I would make this one again – and this time, I’d actually plan to.
