Trim Healthy Mama is back from my traveling adventure! A big shout out to Audra for posting while I was gone! I loved reading her posts, and I’m sure you did, too. I hope she will come back again and share here soon. (hint, hint!) Audra Elizabeth, thank you so much for the work you do here on the blog weekly and for covering while I took my trip to China to visit Victoria Leigh.
And as I was searching for what I was going to post, I realized my post is going to reflect my Audra style. Yes, I normally do plan out meals every week and do meal prep on Sunday nights, but that doesn’t always happen. When returning from China, I felt a bit like this tilted lampshade on the kitchen counter, a little wonky from the jet lag!
In regards to being a Trim Healthy Mama on my trip, I took along some of the new Chocolate Brownie Bars from the Trim Healthy Mama Store and Victoria Leigh and I enjoyed them on our outings! You can take a Trim Healthy Mama out of the country, but you cannot take Trim Healthy Mama out of me!
Those that know me know that I plan and prepare and will pack a lunch or snack when we take a car trip. If you don’t plan, the fast food and convenience foods just call out to us Mamas. It is better to plan and be prepared. You know, a quick trip can turn into a longer than expected outing and a snack may be needed.
But what a beautiful sight home was! The trip was amazing and I will share more at another time, but Trim Healthy Mama arrived home and did not have a plan for the week and wasn’t ready to go to the grocery store upon arriving home, so I decided to use what I had here to make a meal. I was also a bit motivated by seeing a person eating a plateful of spaghetti and sauce while we were at the Terra Cotta Warriors in Xi’an. It was the oddest thing for me to see a pile of pasta and sauce while touring in China, but we did and it made a mark on my mind. Oh, we ate some delicious Chinese food while there, but let me stick to Trim Healthy Mama having jet lag. I realized I could make spaghetti Trim Healthy Mama style with the spaghetti squash on my counter, and I did. It took less than an hour to make. Most of the time was for the squash to bake in the oven. I already had a pound of organic ground beef cooked and ready in the freezer along with a frozen container of marinara sauce. So, I set my frozen items out while prepping the squash and when it was in the oven, combined the meat and sauce in a pan and let it simmer and made the house smell like an Italian restaurant!
It was good to travel and be with Victoria Leigh. It was also good to be home. The little vignette of fruit and veggies and a lovely lamp light and a piece of lovely art was also the first sight of my kitchen.
And here is my Trim Healthy Mama Jet Lag Version meal.
We sprinkled parmesan cheese on top and I served it with a side of green beans for The Salesman. Me, I wanted it just as I’d pictured it in my mind from the day in Xi’an, just a plate of pasta (Trim Health Mama-ized) and sauce. It was delicious!
This meal would be a Trim Healthy Mama satisfying meal. The Salesman said the spaghetti squash was a bit too crunchy for him; but that he liked the meat sauce. He did come back and serve himself seconds. And we had leftovers to eat before Trim Healthy Jet Lagged Mama made it to Aldi.
