Cool weather and apples just seem to go together, don’t they?  Fall apples are delicious and abundant here in the mountains. The Salesman’s dad can pick the best bushel of apples ever in the Asheville, North Carolina area.  If we had to pay for all the delicious produce his parents have shared with us over the years, we’d be out a good bit, but they are givers.  My parents were givers too.  And my grandparents were givers.  We both come from a long line of givers.  Many times I look at all we are given, and think we are reaping a harvest that our parents and grandparents sowed.  Family and parents and our heritage are blessings to me, and this recipe seems to have heartstrings to both sides of the family.  

I say both sides because my mother made a delicious Apple Crisp for our family when I was growing up.  It was such a good memory sitting around the table eating the fruit of her labors.  Mom’s apple crisp was usually served with vanilla ice cream.  My dear brother and I would sit in the yellow leather swivel chairs around our kitchen table and spin those chairs and spoon in mom’s goodies.  But since we have eliminated sugar and gluten from our diet, I was eager to find a similar recipe to my mom’s but without the sugar and flour. Trim Healthy Mama Apple Crumble wins the prize.  I’ve made this several times, and it is simple to make and oh so yummy!

It is a four-step recipe. It doesn’t get any easier, or more delicious, than the Trim Healthy Mama Apple Crumble. You make the apple base first and then the crumble topping.  I made the crumble topping in the mini food chopper Victoria Leigh got for me.  The mini chopper is the perfect size for the job of this recipe as stated in the cookbook, to “process until the oats break down into small particles (not a smooth, finely ground flour but a very coarse flour).” The texture of this crumble was divine.  

Quick, easy, and delicious.  I recommend this one Mama’s for breakfast or a snack with a protein source like Greek yogurt, or for a dessert at the end of an E meal.  One thumbs up from me and an “it was okay” from Audra, and The Salesman did not try this one.

It is the perfect comfort food.
