Trim Healthy Mama Cheeseburger Soup Review

The Trim Healthy Mama Cheeseburger Soup is one of the very first dishes that I tried when Audra Elizabeth made it here at the house four years ago.  Four years ago…said like I think I’m a pro, right?  Well, although I don’t consider myself a pro, I certainly enjoy trying healthy new recipes.  When Audra Elizabeth was a regular around here, she would make delicious food, and there were several of us that would gladly be taste testers.  I remember volunteering to be a taste tester for the THM Cheeseburger Soup she made.

This Cheeseburger Soup is a little different from the recipe Audra made but is still the perfect cold weather meal, and we have been having some cold weather here lately.  So, last week, I made a half recipe.  Since The Salesman’s heart attack, I don’t use beef very often. but this is a great way to incorporate savory vegetables and also enjoy the heartiness and flavor of the ground beef.

The soup is completed in four easy steps.  There were several options given in the recipe:

1.  You could use a seasoning blend or an onion – I used the blend.  I used to be able to buy the seasoning blend at our local Aldi, but haven’t been able to find it there for a while.

2.  You could use gelatin or Integral Collagen – I used the Collagen. If given a choice, I will always choose collagen over gelatin because I seem to be gelatin challenged; I end up with gelatin lumps when I add it to a recipe.

3.  The recipe called for frozen cauliflower florets. I had riced cauliflower on hand, so I used that. I made a note on my recipe that I used the riced cauliflower and liked the consistency of it, so I would buy it again for this recipe.

4.  Turmeric was an option.  I enjoy turmeric and used it (and turmeric is good for you).

5.  Cayenne pepper was for more taste – I added cayenne.  The Salesman and Audra usually like a little more spice than mama.  Audra was going to be joining us for this meal. 

6.  Bragg Liquid Aminos was optional – I did not add because I was out.

The texture of the cauliflower and creamy blended vegetables in this recipe is a win, and it does not go overboard on cream or cheese either.  The Trim Healthy Mama Cheeseburger soup is warm  and wonderful.  I served it with a side salad of sweet butter and red leaf lettuces.  I garnished it with parsley and red onion.  

Two thumbs up from me and Audra. The Salesman gave it a thumbs down.
