I may have just eaten my favorite salmon meal ever. Seriously, it was so good. I like to prepare seafood at least one day a week because of the health benefits. Is there anyone else out there eating seafood because it is good for you?!?  Seafood is high in omega 3’s and is a natural source of vitamins and minerals.  It is so good for your brain, your skin, your joints, etc. I won’t get sidetracked with a nutrition lesson; but, I could. The Salesman is not always as excited about my healthy preparation of seafood: but this recipe ended up being one he really liked.

We were having company over for dinner and I decided to make the Trim Healthy Mama Hangry Pockets. Even though I already had meat thawing for dinner, mid-day I thought that it might not be enough, so, I changed the menu!  Then, I waffled back and forth and thought maybe I shouldn’t try a new recipe for dinner when having company; but, I am so glad that I did!

Maybe you are asking, what is a Trim Healthy Mama Hangry Pocket?  It is basically a parchment paper pocket stuffed with protein, vegetables and seasonings that you bake in the oven!  Serene and Pearl designed them to be the Trim Healthy Mama frozen dinner alternative.  The concept being that when you are hungry, or hangry, is not the time to be doing your food preparation. The pockets of meat and vegetables that you put in to parchment paper to bake, blow up with steam and lock in the flavors while baking.  Many Mamas make these ahead and just pull them out of the freezer for a quick meal.  I made them fresh verses as a frozen dinner.  And Mamas, after making them once, I am going to plan to add these to my meal prep night one week and put some in the freezer.  The Hangry Pocket is such a great, and healthy, concept.

The premise to the recipe is four easy steps:

  1. Choose your protein
  2. Choose your veggies and optional grain or sweet poatato
  3. Choose your flavorings and healthy fats
  4. Fold and Bake
Mamas, this is a simple and easy meal to make!  First you cut out your parchment paper and place your meat to the right of the center fold:

You will then add your vegetables, flavorings and fats.  Here is a list of what I added to our Hangry Pockets:
Salmon
Sun-dried tomatoes
Fresh garlic
Gournay Cheese – Garlic & Fine Herb
Lemon slices
Butter
Trim Healthy Mama Mineral Salt

Fresh organic sliced yellow and red peppers
Once you have filled your pockets, you fold the parchment in half and then tightly fold the edges of the parchment to seal them.

When you remove the pockets from the oven, they are blown up with the steam – it was like removing a French pastry from the oven!

When I  opened the first pocket, I knew we were in for a delicious dinner – it smelled heavenly!

The THM Hangry Pockets were absolutely delicious!!!  And everyone at the dinner table agreed, even The Salesman! His only comment was that he did not like the lemons, so please, in honor of The Salesman, push the beautiful lemon slice garnishes to the side and do not eat them!
