Trim Healthy Mama Chocolate Chip Pancakes Review

I was all set to go about my Saturday morning as planned:  Be at my desk by 9am and write, write, write, then take a break in the afternoon to do a walk-by showing of respect to a neighbor lady whose husband went home to be with the Lord this last week.  But I had this thought:

First we have pancakes.

My first response to that thought was *I don’t normally eat breakfast*; but, since I continued to have it and I kept thinking of it in light of Margaret Jensen’s book First We Have Coffee, I got my Trim Health Mama cookbook out and moved forward with *First we have pancakes*.  I already had this recipe flagged to make and it didn’t take long to gather the ingredients together.  In the second step of the recipe it instructs the Trim Healthy Mama to turn an electric griddle to medium heat.  Now, for me, that involved getting the step ladder out and getting the electric griddle down from those cabinets over the refrigerator where we store those items that are not used that often.  I almost changed my mind; but, I am so glad that I didn’t.  Getting the step ladder and climbing to get the griddle was so worth it, Mamas. You are going to really like these light and fluffy pancakes.  They can be made in just three easy steps and the third step is suggestions for toppings.  Easy peasy.

And oh my goodness, delicious!

I also prepared a pan of sizzling turkey bacon in the oven and had a pan of scrumptious chicken sausage on the stove top, washed some organic blackberries and called it Saturday Brunch.  I’m not quite sure what it is about Saturday mornings that call out to me to prepare brunch; but there is a slower pace about the weekend that just bids me to prepare a leisurely brunch.  In my ideal world, every day would start with brunch.  I haven’t always been like this; but I am in the brunch season of life and I like it!  We are all in a slower paced season right now.

I so recommend this THM Chocolate Chip Pancakes recipe.  It is delicious, and if you feel you *need* a taste tester for your pancakes, I am available, just sayin’.   I tripled the recipe for The Salesman and me.  I absolutely enjoyed these pancakes.  The Salesman said he was still hungry and would prefer them without chocolate chips.  So there you go.

Recipe: Chocolate Chip Pancakes
Serving: Single Serve (3-4 pancakes)
Fuel: S – Satisfying
NSI: – No Special Ingredients – Use the frugal flour option (see page 40) and a grocery store on-plan sweetener.  Sub another stevia-sweetened chocolate chip or use chopped 85% chocolate.

You will definitely want to buy the THM Chocolate Chips if you haven’t because they contain no inulin and no dextrin – so no cheap fillers to bloat your tummy or mess with your blood sugar.  The chips are smooth and creamy.  I use them to make a snack mix out sometimes in the early evening with nuts and unsweetened coconut.  Yum.

I cooked the pancakes longer than the cookbook recommended.  I used unsweetened almond milk in the choice between it and cashew milk.  And I did use the optional vanilla extract as well.  Coconut oil was my fat of choice verses butter.  The pancakes were really tasty.
