Just Like Campbell’s Tomato Soup Recipe and Review

It seemed like it rained almost every day last week and I wanted something warm and comforting and quick for lunch. I came across the Trim Healthy Mama Just Like Campbell’s Tomato Soup recipe and it seemed like the perfect meal for a cold and rainy day.  It was so good, I ended up making it another rainy day.  Growing up I remember my mom making me Campbell’s Tomato Soup and serving it with a grilled cheese sandwich that had been cut on the diagonal.  Isn’t it funny the details we sometimes remember?  Like it is not so important that the grilled cheese was cut on the diagonal; but, I remember it being that way.  So while preparing this warm and wonderful soup, my soul was warmed by the memories of my mom making this meal for me when I was a young girl.  So, I then decided to add a grilled cheese to my Trim Healthy Mama version of Campbell’s Tomato Soup.

As you know, I am an Aldi fan.  The Salesman jokes that we need to move closer to their store!  Well, I’d bought some wonderful Pumpernickel bread and Colby-Jack cheese there and it made the best grilled cheese I think I’d ever eaten.

Fuel: S – Satisfying

NSI: No Special Ingredients (If using your favorite on plan sweetener of choice and not using Nutritional Yeast}

I decided to not use the sweetener and the soup was yummy! The Salesman was not at home either day that I made this soup, so he does not have a review to leave.  It is definitely a delicious thumbs up from me!  And if your local Aldi has pumpernickel bread, try some for making a grilled cheese, you won’t be disappointed.
