Trim Healthy Mama – Zucchini Canoes Recipe and Review

I tried a quick and wonderful recipe this last week that was a hit with The Salesman and me. Yes, I will say right up front that he liked them and even volunteered to eat them again!  It was a big score for the Trim Heatlhy Mamas at our house!  The Salesman thought they smelled like pizza while they were baking, and I agreed, and told him that it was like pizza.  And truly it was.

This base of this simple and delicious dish is zucchini that has been cut in half and the seeds scooped out to form a canoe.  You then fill the canoe with protein and veggies and top it like you would a pizza.  It is so easy.  You can watch Pearl and Serene make the dish, and get the recipe, on The Talk of the Town TV show, if you click here.

Recipe: Zucchini Canoes

Serving: Family Serve – Feeds 6 to 8 (Halve ingredients if your family is smaller)

Fuel: S – Satisfying with a FP – Fuel Pull option

NSI: No Special Ingredients

DF – Dairy Free (If using Hello Cheese, page 487)

Since I had ground beef already browned and prepped in the refrigerator,  I decided to use it as my protein for the Zucchini Canoes.  I think the canoes would be good with chicken or tofu as your protein source, too.  Since I did not have green onion on hand to sprinkle on the top of the canoes, I added finely diced white onion to the ground beef and tomato mixture.  I then sprinkled mozzarella cheese on the tops and since I decided not to use olives, I used colored mini peppers which probably added to the pizza look.  I did garnish with turkey bacon as the recipe suggested.  The recipe was easy to follow.  And the hot out-of-the-oven dish served up with a side salad and fresh veggies, gets two thumbs up from us!
