On most days, I enjoy baking and cooking; but, there are times when I open the cabinet door and grab a Trim Healthy Mama Cuffin Mix and am so thankful to have something pre-made. Often I will use the Cuffin Mix to whip up a single serve muffin in a mug and will squeeze a dollop of whipped topping on the top and The Salesman and I are both happy. You can use these mixes to make a cake, cookies, or a muffin in a mug.

With either mix to make a quick muffin in a mug, you just use 1/3 cup of the dry mix with 1 egg, 1 tablespoon coconut oil and 1/2 tablespoon water. Microwave in a mug or small bowl for 85-90 seconds or bake for 12 minutes at 350 degrees. Slice and frost or top with butter.
It’s so easy peasy and does not disappoint. Either flavor is a winner this way!

I recently used the mix to make the Cinnamon Cuffin Cookies and my friend Megan loved these cookies! The Salesman and I preferred the muffins, so we sent the extras home with Megan. A couple other friends tried the Cinnamon Cuffin Cookies and thought they were a little dry, and I agreed. One said I shouldn’t have dusted the tops of the cookies with Gentle Sweet. I would agree, I don’t think they needed the extra sweetener on top. In reviewing the recipe, I may have followed part of the directions for the single serve muffins that I always make instead of the cookie recipe I was trying… No wonder they tasted a bit dry – I may have followed the wrong set of directions on the back of the bag. Oh well, I have more mixes on hand, so I will try again. The Salesman and I normally like the end result of either mix! The cookies did have a nice texture and cinnamon is such a powerful antioxidant.
