My mother-in-love and I had a conversation this last week about iron skillets and I believe this may have been the deciding factor for me to make this dish when I read “Grab your big ol’ iron skillet, just like Grandma used to use!” So many good memories are related to meals my mama made using her iron skillet that I now have and use in my Trim Health Mama Test Kitchen. My mother-in-love makes wonderful food in her iron skillet. Do you have an iron skillet? I sure do enjoy using my mamas.
Have you ever made a frittata? Sounds fancy to me – a food that Frasier Crane would enjoy. And just so you know, my very own Frasier Crane ate two slices of the BLT Frittata. So, that means two thumbs up from The Salesman and me! A frittata is just an everyday easy food and the kind of food I think could eat often. Since the base of frittata is eggs, I think of it as brunch food. Of course there are the personal taste additions of meat, vegetables and cheese. It is comparable to a crustless quiche. The BLT in the Trim Healthy Mama frittata stands for “bacon loves tomato.” Though I followed the recipe exactly, I think that the next time I prepare this, I may prepare a turkey, Swiss, and spinach frittata. This meal would be so good for breakfast, lunch, or dinner. And Mamas, the BLT Frittata it is so easy to prepare!

For making my THM BLT frittata, I used turkey bacon, cheddar cheese, and I did add the optional onion. It was so good. I served it with a wedge salad and some fresh berries – yummy!
