Trim Healthy Mama Strawberry-Kale Salad Recipe and Review

If you’ve been around here awhile, you know how much I enjoy kale.  Kale is a powerhouse vegetable and I am going to try not to get sidetracked on repeating that food is medicine and this super veggie is rich in nutrients and health benefits.  Today, I am just going to share a delicious and quick salad recipe to enjoy eating kale, in case you are not yet a fan.

Did I tell you all I have a Kale sweatshirt?  I do, thanks to my China Doll.  I actually tried to give it to an friend who I introduced kale to a few years ago.  You will be glad to know that since she declined the offer, I still am in possession of the said kale sweatshirt / powerhouse cape!

Mamas, make this salad and feed it to any kale doubters that are in your life.  I know, there are probably some kale doubters out there, who as a child were given this cruciferous vegetable on their dinner plate and rounds of *clean your plate before you can leave the table* were played with kale being the star attraction.  With that thought in mind, I never even offered it to The Salesman.

Saturday night I was invited to a private little soirée with 7 of my dearest friends. I brought the Trim Healthy Mama Strawberry-Kale Salad and it was a hit.  Oh friends talked about how good it was and asked for the recipe and helped themselves to seconds.  And speaking of hits, we *may have* loudly sang to some 80’s music videos at the party.  So for you, my 80’s music loving and healthy mama friends, this one is for you!

TRIM HEALTHY MAMA STRAWBERRY-KALE SALAD

Ingredients
  • 8 – 10 cups kale (2 bunches), washed and drained
  • 1/3 cup extra virgin olive oil
  • 2 tbsp lemon juice (best if fresh)
  • 2 tbsp THM Gentle Sweet (or equivalent sweetener of choice)
  • 1/2 tsp THM Mineral Salt
  • 2 cups fresh strawberries
  • 1/4 cup roasted and salted sunflower seeds (or other nuts of choice)
Instructions
  1. Place the shredded kale into a large bowl and drizzle olive oil over it. Using your hands, gently mix and massage olive oil into kale. This process will slightly wilt the kale and make for a softer leaf.
  2. In a small bowl, mix together the lemon juice, mineral salt, and sweetener. Pour over kale and combine well.
  3. Toss in the strawberries and sunflower seeds (or other nuts of your choice) just before serving along side your S meal.
Recipe Notes

This is a NSI (No Special Ingredients) recipe if you use a store-bought, plan-approved sweetener.

I made the recipe exactly as written.  Well, exactly if you consider that when I wash and drained my kale, I then go through each leaf  and cut off any of the big crunchy stalks.  I am not of fan of the big crunchy stalks and I think it is totally worth the time to remove the stalks.  I did use fresh lemon juice and of course, I used the THM Gentle Sweet and the THM Mineral Salt; but, you can use your own store bought sweetener and salt and make this salad and be a Trim Healthy Mama, too.

Now add the ingredients to your weekly grocery list, and make this salad and impress your 80’s music loving friends!
