Trim Healthy Mama Guilt Gone Cranberry Pie Recipe & Review

Because this pie made the house smell just like a bakery while it was in the oven, I found myself skipping dinner and going straight for dessert. Mhmm, yes, I did.  And, was I ever glad! I don’t think I’ve ever had a cranberry pie pre-THM; but, this pie recipe reminded me of a coffee cake.  It was good!  And…. drumroll…the Salesman liked it, too.  He said it had a nice texture and it was tart.  It is also sweet and buttery and has the texture of a made-with-flour coffee cake. Make this recipe, Mamas!  You will thank me later!
Guilt Gone Cranberry Pie Recipe
1/2 cup THM Oat Fiber
3 eggs
2 cups cranberries (fresh or frozen)
1/4 tsp guar gum (or Xanthan gum)
1/2 cup THM Gentle Sweet (or 1/4 – 1/3 cup THM Super Sweet)
1/2 cup butter
1/2 tsp almond extract
1 tsp THM Vanilla Extract
1/2 cup chopped walnuts (optional)
  1. Cut butter into small chunks and put into a mixing bowl with all other ingredients except cranberries.
  2. Use your hands (or a mixer) to combine all the ingredients well.
  3. Add cranberries and mix again.
  4. Put pie mixture into a well-greased pie dish and bake in a pre-heated oven on 350 for 40 minutes. (Place pie on middle to high rack so the bottom does not burn).
As far as the options, I used:
Fresh cranberries
Xanthan gum
Gentle Sweet
Walnuts
Mixer
I would make it again exactly as I made it today. And I’m also thinking of trying it with different berry combinations too.  I am thinking of using blueberries and adding a lemon extract. I’m also thinking of making it again tomorrow with cranberries and fresh blackberries.  Other Mamas have made this recipe in muffin tins and some have tried them as cookies! Oh, the possibilities!
