Y’all have to know at the beginning of the year we started out with one healthy goal: Eat more fruits and vegetables.
Fast forward to October and here we are eating vegetables as the main meal – this particular one because the Salesman has been sharing healthy recipe videos with me to try. Sometimes you can’t get all the details off the video or even the link they reference; but I made these (with a little help from googling other recipes & adding a little this and that) & give them a 10/10
Black Bean & Chickpea Burger Recipe
15 ounce can Goya chickpeas, drained
15 ounce can Goya black beans, drained
1/2 cup old-fashioned oats
1/4 cup diced white onion
1 tablespoon paprika
1 tablespoon parsley
1 tablespoon tomato sauce
Mash peas & beans
Mix everything together
Shape into patties
Fry in a little olive oil 5 minutes per side
Enjoy!
I served it on a piece of lightly toasted sourdough with Dukes, dill pickle slices, paper thin white onion slices, romaine lettuce, and way too much mustard – cause ya know it squeezes out way too much at first And added a side of leftover Killer Green Beans.
