Trim Healthy Mama Fifteen-Minute Focaccia Bread Review

Last week, I was well into dinner prep with the chicken baking in the oven and a veggie washed and ready to be steamed, when I realized, I was out of bread.  Now, this may not be a problem for you; but The Salesman believes you need to have bread with every meal.  I have tried to make and serve meals without the staple; but, he will inevitably ask for a piece of bread.  It is just the way it is at our house. Mealtime equals bread time.

So, what is a Trim Healthy Mama to do when you are already preparing dinner and you know it takes a while to make, and bake, bread? Well, you turn to your Trim Healthy Table cookbook and find a dinner-saving, fifteen-minute recipe for focaccia bread. You look at the clock and see that you have 25 minutes before the chicken is done and you set to work to see if you can get the ingredients mixed together and in the oven in time, so that the focaccia bread comes out of the oven at the exact time as your chicken dish.  Shew.  It seems like a tight fit; but I’m up for trying a new, and quick, recipe.  The timer is counting down to dinner, and the focaccia race is on to the finish line.  The Trim Healthy Mamas have won the race by creating a healthy artisan bread that you can have on your dinner table in about 20 minutes.  I say 20 minutes because it took me five minutes to mix up the ingredients, and then the recipe calls for a 15 minute baking time.

Fuel: S – Satisfying
For NSI – No Special Ingredients:  Use the frugal flour option (see page 40) and look for a grocery store whey protein isolate (see page 43).

For DF – Dairy Free: Sub the nutritional yeast for the parmesan and use collagen in place of the whey protein.

I used a frugal flour option this time.  I store my make-at-home option in organized, labeled containers in my cabinets.  I need to print a new label for this one. I will definitely make the savory THM Fifteen Minute Focaccia bread again.  The next time I make it, I am going to try adding sun-dried tomatoes and cream cheese to the top before baking, along with the fresh rosemary.  I could sit at the dinner table with this bread and a small saucer of oil and vinegar, and think that I see Tuscany in the distance. 

Try this one Mamas, and make your bread eaters happy!  The Salesman also had this focaccia bread the following morning with fluffy scrambled eggs and chicken sausage.
