Macaroni and Cheese is one the ultimate comfort foods.  It is right up there in my book with chicken pot pie, mashed potatoes and cottage cheese (for me, it has to be the combination of the two), and new potatoes and peas – a favorite fresh-from-the-garden combination.  As a child, my mother hardly ever cooked anything from a box; but, Kraft did a good job with their commercials and boy, could I beg for a blue box of mac and cheese when I’d grocery shop with my mom. As the years progressed, I learned to make homemade macaroni and cheese, and then progressed to a crockpot macaroni and cheese recipe that when served, always came back completely gobbled up.  It was a crowd winner, and a calorie, and carb winner, too.

Mamas, the Trim Healthy Mama Not Naughty Mac ‘n Cheese is THE BEST.  Sorry for the caps; but it is THE BEST.  I may have made it three times recently, because, it is THE BEST.  It has entered my Trim Healthy Mama Top Ten, which I did not have until this post; but, I have to repeat: the Trim Healthy Mama Not Naughty Mac ‘n Cheese is THE BEST.

Seriously Mamas, go get your THM Not Naughty Noodles out of the pantry and make this.  Why, oh why, did I wait so long to make this? It may have been comments that I’d heard about the noodles having a fishy smell or the texture being too firm.  It was fake news.  Yes, fake news.  Oh, remember when I reviewed Trim Healthy Mama RICE  – well, it was all the same feels.  Yet, I’d let my noodles sit up there on the top shelf of the pantry because I was concerned about being able to handle the smell.  I opened the package and prepared them just as the package suggests, and without having to put a clothespin on my nose.

The THM NNMnC (my abbreviation made me laugh) was also one of the easiest recipes ever to prepare.  All done in one easy step.  The Mac ‘n Cheese is creamy, delicious, and it is made from the konjac root with oat flour, so it is healthy for you.  When you order, don’t worry that the noodles are sold in a case, because you are going to be wanting to order more from the Trim Healthy Mama Store.

The Sisters gave an option for adding chicken to the mac and cheese for a main dish option, which I think would be wonderful.  I made the recipe exactly as listed in the cookbook, and The Salesman and I, give it a thumbs up.  I usually pack my lunch on the days I get my hair done and love to share with THM Kitchen recipes with my cousin, so she tried this recipe and thought it was really good.  It is THE BEST!  It is a Trim Healthy Mama comfort food for the win!

I will definitely be making this one again.  And again.  I may try adding garlic the next time.  Or, I have been eating tuna a couple times a week – I may add tuna.  Or, I have been thinking about making the THM Mac ‘n Cheese with parmesan cheese and adding chicken and broccoli like an Olive Garden dish.  Needless-to-say, this recipe is a keeper, Mamas.

Enjoy!
