Mama Mia! Pizzeria! This Italian-style meatloaf is one of the best Trim Healthy Mama recipes that I have made! While it is baking, your kitchen will smell like a pizzeria, and when you sit to enjoy the meatloaf, you will find it tasty and flavorful.
The Trim Healthy Mama Mia Meatloaf is Salesman approved. He has been known to ask for seconds of this one. Now granted, since his heart attack a little over a year ago, we don’t eat much red meat. After his heart attack he was told to eat red meat once (or twice) a month, half the size of his wallet. So, occasionally I will make a meal with beef; but not on a regular basis.
For years, I have used my Aunt Dorothy’s meatloaf recipe. I always thought it was a prize winning meatloaf. I mean, if I were giving out prizes for a tasty meatloaf, Aunt Dorothy’s meatloaf won every time with me. However, not everyone in our home was a fan of the meatloaf. So imagine my delight when Mama Mia Meatloaf made its first appearance at the dinner table in March of 2018, and it was a hit. Yes, this Trim Healthy Mama recipe is a tried and true one for me. I have made it many times and it always makes for a delicious dinner.

For NSI: Use oats in the meatloaf mixture and a grocery store on-plan sweetener for the sauce.
The recipe calls for using a food processor; but I have used my blender every single time I’ve made the Mama Mia Meatloaf and it works really well. The recipe uses ground beef and calls for Italian sausage. Since I don’t eat pork sausage, I use a chicken sausage that I buy at Aldi’s and it is a very tasty substitute. You are also given the option to use the Trim Healthy Mama baking blend or rolled oats. I use the rolled oats. I’m not adverse to using the baking blend, because I do use the blend often, it’s just personal preference to use the rolled oats in the meatloaf. In the instructions you will read that it “releases a lot of fluid” which you can see in the last picture. They recommend after draining to keep some of the fluid in the pan to “keep it moist and flavorful”.
Doesn’t the sauce look delicious? True to Trim Healthy Mama form, more than just tomatoes are hiding in this Mama Mia sauce! Your picky eaters will never know. I need to make this for my friend, Denise. She is adverse to a particular vegetable’s texture; but I am very certain she would like this Mama Mia Meatloaf, even with that particular vegetable blended into the sauce!
When you take your Mama Mia Meatloaf out of your oven, it will look like a pizza and smell amazing!
It is suggested to pair it with the WWBB Garlic Bread on page 245 and a side salad. I’ve paired it with mashed fauxtatoes and broccoli.
