When you are expecting company do you plan menus and bake ahead?  I do. And I’ve been busy because Victoria Leigh is coming home for a holiday break! We are so excited! I am excited. Audra Elizabeth is excited. The Salesman is excited.  His family, and my family and friends, are excited. Everyone I run into always asks about her and it seems they have all joined into the excitement of her visit.  Her room is ready. Though I’ve re-arranged it a time or two.  I’ve organized her mail. The plants I inherited when she moved to China are looking good for the most part, and I’m a bit proud of that fact!  There are fresh flowers about. A new *old* record is on her record player for her listening pleasure.  We have planned a few fun outings while she is here.  My friends have helped me make a fabulous sign for the airport pickup party!  Yes, my party planning has kicked into high gear, and my friends have joined in the fun!  

I am one excited mama.

But back to meal planning and baking ahead.  As an avid organizer, meal planning is fun.  I’ve learned to be flexible though because The Salesman enjoys eating out several times a week.  When Victoria Leigh is home, we will be having company and visitors because plans have been made by family and friends to come to the house while she’s here.  In an effort to fully enjoy her time here, I’ve made meal plans and even had an official baking day to accomplish prep and baking in one day.

One of the breakfast items I made ahead for Victoria’s visit was the Trim Healthy Mama Chocolate Banana Muffins. I had made them before and remembered that they were a hit for The Salesman and decided to make a batch ahead of time so we could just pull them out of the freezer and enjoy.

You have to try these muffins – they are delicious! And you know if The Salesman approves, they have to be really good.  And from the making end, they are super easy.  I filled my mom’s muffin tin pan with 12 liners and had enough batter for an additional six which I baked without liners.  They came out of the pan easily too.  All ingredients in the recipe are combined in a large bowl, calling for the banana pieces to be folded in lastly. In an effort to make sure I got banana in each muffin, I added them to the individual muffin tins and folded them in before baking.


Yum.


Delicious.
