All Olive Garden fans, please raise your hands! Do you see that I have both of mine raised? In the past, we occasionally enjoyed driving to the big city to eat at Olive Garden; but, recently our town opened its very own Olive Garden! Olive Garden is one of my favorite restaurants and the Zuppa Toscana soup they serve with spicy Italian sausage, kale and potatoes is such a delicious offering. Trim Healthy Mama has scored a winner with their restaurant-worthy Trim Healthy Mama Trim Zuppa Toscana soup.
You won’t be missing the russet potatoes in this healthy version because the Mamas have disguised the cauliflower and okra into a most flavorful, textured soup! The Salesman has been known to ask which dish at the table has okra hidden in it!!! I did not taste the okra in the Trim Healthy version at all. I promise. And the Mamas give the option of using either kale or spinach. How can you go wrong with kale or spinach? In my opinion, you can’t! This soup is packed with nutrition and flavor. It does take more time to prepare than the soup I reviewed last week; but it is so worth it. And it makes a very generous 6-8 portions, so invite your friends over to share this one. Pearl and Serene use venison sausage in their cookbook recipe; but suggest pork, chicken, beef, or turkey sausage.
