This week when we returned from eating out at a Japanese restaurant, I decided to try a new recipe from the THM eZine for protein bars: Bao Bomb Bars. Say that three times fast! After eating out is a great time to try a new recipe for a dessert or snack, because I am full and am not tempted to eat while making or baking.

These tart bars are packed with baobab, collagen and whey protein. They were so quick and easy to make. I made them in my blender, though the recipe calls for a food processor, and the consistency was great for making into balls. I originally put the mixture in a pan to form into bars, and then decided to do half bars and half balls. The treats are tangy and citrusy from the lemon juice and the baobab powder. I used the two tablespoons of lemon juice option verses the two and a half. I am storing my bars and balls in the refrigerator.
Though they are not uniform in size, they are tasty and look good!
