“Where’s the beef?”
Do you all remember the slogan from the Wendy’s burger commercial in the 1980’s? Well, I have felt that way a bit lately. Since The Salesman’s heart attack in June, I’ve greatly reduced the amount of beef we eat. Combined with Victoria Leigh, who does not prefer beef, moving home for a season, I’ve felt a bit like a lady in the commercial, looking for the beef. I’m not a huge fan of beef; but, I do like to have some to eat occasionally. When Victoria jetted to Florida to visit a friend last week, I added this recipe back into the rotation. It was a tasty treat for me.
Cheeseburger Pie is one of the easiest recipes to make, I made it early morning the day after she left, and have paired it with different sides and salads for a few days. Since there are only two of us eating this one, I have stored part in the freezer for another day.

One of the great pluses to this recipe, is that you can add whatever you normally add to a cheeseburger, to this pie. This picture shows a bit of tomato, because I added salsa to the recipe when I made it during the summer months. It was delicious! Think of adding bacon, mushrooms and swiss, onions, pickles, tomatoes, peppers and you have a made-to-order cheeseburger pie!
The Salesman adds ketchup to his. Just keeping it real. I like to add pickles and onions. Yum.
