Trim Healthy Mama Holiday Pumpkin Trimtastic Roll Review

This is my favorite time of the year!  And the weather that I traditionally think of associated with this wonderful season, has finally arrived!  The cool, crisp weather has motivated me to try some of the new *fallish* recipes in the Trim Healthy Table cookbook.
I’d heard some good reviews of this recipe, and do agree, it is a keeper.  I am a loyal fan of the Trim Healthy Mama Trimtastic Cake. Almost everyone that I’ve served it to, has liked the taste.  My favorite version of the Trimtastic Cake is the pumpkin version, so I was really looking forward to trying this pumpkin roll recipe.  Now, holiday is in the title; but we don’t have a holiday coming up in the next few weeks.  
We do, however,  have an exciting event happening this weekend and we our going to this enjoy this pumpkin roll then!  The event does involve our daughter, Victoria.  And, I believe the last time I made a cake roll, was in November of 2008 for Victoria Leigh’s Fourteenth birthday.  If you want to see some darlin’ pictures, check out this post from Victoria’s 14th birthday.  The years fly by, don’t they?  She is still our baby girl.  Always will be.

The recipe was easy to follow.  The first picture shows the cake successfully inverted onto a tea towel with sweetener on it.  This task seemed daunting to me; but, it went well.

Here is the cake rolled in the tea towel. And so far, so good.

The filling for this cake is THE BEST.  I will use this filling recipe to top my Trimtastic Pumpkin Cake version.  Oh my.  I made two batched of the filling just because it is sooooooo good.  It is just the right balance of all the ingredients!  If you like cream cheese filling, you must try this!

Now, I let the cake cool for hours and thought I’d have no trouble with cracking; but I did have some cracking in the lower right corner.  I think you can see from the picture where it looks like there is a break in the cake, there is.

It rolled back up beautifully and was wrapped and placed in the freezer until we were ready to serve.
