Happy Monday, dear friends!!!
I hope you had a good weekend and are doing well. Home improvement projects are in full swing at our home and so much is out of place; but it is a good thing – work is getting done! Drywall is being repaired, ceilings painted, wallpaper is off the laundry room walls, walls and woodwork are being prepped for paint. It really is exciting to me! But there is not much that is where it should be, except in the kitchen.
And I have a great recipe review to share with you today from the new Trim Healthy Table cookbook. It is on page 118 of the Comforting Casseroles and Bakes chapter. Even though I have never considered myself a “drive thru Sue,” this S (satisfying) quiche recipe is a keeper! It is an easy, three step recipe with no special ingredients.
Here is the quiche warm from the oven and it looks similar to me to other quiches that I’ve made before:

I served it with a butter salad and ranch dressing. The Salesman had fresh, raw vegetables too.
When the Salesman asked for more, he told me that he really liked the macaroni and cheese and wanted more…so, I gave him more “macaroni and cheese” and he ate it and was happy. I thought about his comment and took a picture the following day of the quiche as I went to re-heat it, and must admit, it does look a little bit like a crockpot macaroni and cheese that I use to make! So, I can say, this recipe is Salesman approved. If you ask him about it though, he will refer to it as macaroni and cheese!
