I have noticed a trend in my Trim Healthy Mama reviews lately – they are from the Comforting Casseroles and Bakes chapter of the new Trim Healthy Table cookbook…and today is no different!
When we lived in North Carolina, my friend Anne, had a subscription to the Taste of Home magazine and Anne made and shared some delicious recipes with me that she tried. So, when I saw the title of this entry, I wanted to try it because of Anne. You know, good friends are blessings! I am blessed to have many good friends. I pray that you do, too!
The Taste of Home Casserole is a Satisfying recipe and is found on page 144. It is also a No Special Ingredient casserole. It was easy to make. There is an option for either 0% Greek yogurt or sour cream and I used the 0% Greek yogurt. Nutritional yeast was optional and I did add it to the recipe. This reminded me of a green bean casserole that my mother used to make when I was growing up, and in my opinion, this is a good knock-off recipe of the original. It is a family serve casserole, which means there are 6-8 servings. It.is.soo.good. It definitely belongs in the comfort food chapter!
The first day that I served this, The Salesman was not too thrilled with it and he let me know. So when I served it again, a couple days later, I added more spices to his serving and he commented on how good it was and what a difference the spices made to him! So, I’m going to say that it is Salesman approved!
This will be on my make again list.
Look at the creaminess of this casserole. You all, that is 0% Greek yogurt! Score! And it is tasty!
