I’ve shared that I am currently on a cauliflower kick and this recipe satisfies my cauliflower cravings! It is delicious. I will definately be making it again. It uses two 12 ounce bags of cauliflower for a 9 x 13 pan. You will find it on page 140 of the new Trim Healthy Table cookbook in the Comforting Casseroles and Bakes chapter. It is a No Special Ingredient recipe and is considered a Satisfying dish. And it is Salesman approved – he thought it was good!
So we know from the title that it has chicken, bacon and rice. The cauliflower is the “rice” in the recipe. And I used turkey bacon for the bacon in this recipe. Did I share with you that I have given up pork products recently? Well, I have. The turkey bacon tasted good to me in this casserole. This recipe did not tell me what to do with the bacon after it was cooked and transferred to a plate. The cauliflower rice was the tastiest part of this casserole to me! The only ingredient that I did not have on hand was dried onion flakes; but, the recipe tasted so good even without them. I will add them the next time I bake this dish, though.
