Good morning! Happy Monday! I hope you had a restful weekend. I had one day of rest and one day of busy! It was a good weekend though. We are enjoying some much needed rain in East Tennessee.
I have been blessed recently with kale from my friend Janene’s garden. I am so thankful for friends and for fresh garden vegetables. My dad had a big garden when we were growing up and fresh vegetables bring back memories of my childhood and my family.
The Trim Healthy Mama recipe that I’m going to review today is from the first Trim Healthy Mama cookbook in the chapter All Things Smooth and Crunchy. You will find Kale Chips on page 464. The recipe is a single serve recipe. It has two options for making it in either the satisfying category or in the fuel pull category.
I used the fuel pull option and followed the directions as listed. The recipe is simple and easy to make. There are only four ingredients. I was listening to a podcast when I made these and I do believe I got a little distracted with the salt, because mine were too salty. I used nutritional yeast on the top of the kale chips.
As far as texture and taste (minus my obviously too generous pinches of salt) the chips were very good. Next time I believe I will use the ranch seasoning option. Since Janene sent me home with a bag of kale today that was about the size of a present bag that Santa Claus would carry, I may be trying them this week.
