If you are looking for a superb Italian dish, Chicken Parmy is the answer.  I had a Chicken Parmesan recipe that I had used for almost 25 years before I was introduced to Trim Healthy Mama, and Chicken Parmy is a healthy re-make of my recipe.  Why hadn’t I tried this recipe earlier?!  Seriously, it is so tasty and delicious.  I made the entire family serve for The Salesman and me, and we both ate it all.  There were no complaints about leftovers on this recipe.  It was as good for leftovers as it was hot from the oven.  One day I sliced a piece of chicken and grilled it with vegetables in a pita…oh my, it was so good!  The Salesman came through that day and commented on how good it smelled.

Serving: Family Serve – Feeds 6 to 8 (Halve ingredients if your family is smaller)

NSI: If using ground up Joseph’s Pitas for the crumb mixture
And the preparation of the recipe was just like the prep for my old recipe, too.  I used the Trim Healthy Mama Baking Blend verses the ground-up Joseph’s Pitas option for the crumb mixture.  I then added all the spices and I thought the crumb mixture on the finished dish tasted like the one from my old Chicken Parmesan recipe.

In the Snatch Em Up Chicken Tenders recipe there was an excess of the crumb mixture and I wondered if I should scale it down for this recipe; but, decided to make it as written for the first time.  There was a small amount of the crumb mixture left after all the chicken was coated and the recipe instructed to sprinkle any leftover mix over the tops of the chicken, so I sprinkled.
I am a fan of the Trim Healthy Mama Mineral Salt which you will use in this recipe.

Here is a picture of the crumb coated chicken coming out of the oven before the sauce and cheese were added to the tops of the chicken. The baking time was accurate and this recipe was easy to follow.  If you have the Trim Healthy Mama Baking Blend the recipe is quick to put together.  The first night I served the Chicken Parmy with a variety of fresh vegetables.  One night for leftovers, we had a side of steamed spinach.  I will definitely make this recipe again!
