I hope you had a wonderful holiday weekend. I am extending the holiday by sharing a Flag Cake version of one of our all time favorite Trim Healthy Mama cakes. Yes, I did say our, this one is Salesman approved. And, almost everyone else that has every tried this cake, has liked it too. If you have been around here long, you know that this cake was the first Trim Healthy Mama dessert that Audra Elizabeth introduced me to and I liked it from the start. I served it this weekend to a group of friends, and they all agreed, being a Trim Healthy Mama can be delicious. My dear mama made holidays and birthdays so very special for me, and our family and friends, when growing up. I have inherited mamas love and legacy of making celebrations special. Celebrating is a part of the very fiber of who I am and a precious legacy to me. Making a Flag Cake for The Salesman and me to celebrate the fourth was a small way we could celebrate the freedoms we enjoy. I so want to continue a legacy of celebrating the good times with, and for, my family and friends.
Now, in Salesman style, when I served him a piece of the Trimtastic Flag Cake, of course he asked what was hidden in this cake – okra?! He knows that we Trim Healthy Mamas are all about eating our vegetables and he was right, there was a vegetable in this flag cake – zucchini – but, after laughing, I told him I only added rainbows and unicorns. He served himself a second piece not long after the first!

The chocolate cream frosting that is the companion for the Trimtastic Cake in the cookbook is really good; but, I wanted a white flag background and had been thinking about making a buttercream icing verses just leaving out the cocoa for the cream frosting. When I searched the internet for a recipe, I found one for a chocolate buttercream icing that sounded good and decided to tweak it to make a white buttercream icing. Here is my version of buttercream icing, that I will now call Buttercream White Flag Icing:
1 cup butter, room temperature
1 tsp. vanilla extract
3 Tbsp. heavy whipping cream
1 1/3 c. Gentle Sweet
- Blend butter, vanilla, and heavy whipping cream
- Add Gentle Sweet and blend until light and fluffy
Organic blueberries and strawberries were added to make the flag pattern. Several friends tried this flag cake and agreed, it is really good! And, I would offer you a piece; but, it is all gone!
