When The Salesman would travel regularly to Chattanooga he would bring home a beautiful brown bakery box of lemon cookies iced with a thin glaze that would puddle in tiny pools surrounding each cookie. The first time he brought them home and announced what they were, I had a question blip across my mind: “Why did he bring LEMON cookies home and not raspberry, or oatmeal, or…” I am so glad that the conversation only went on in my mind, because once I sank my teeth into those light, lemon cookies, I wanted to not only eat them, I wanted to dive into those little pools of icing in the box! Goodness, those lemon cookies were amazing. At that time, I had not been a fan of the lemon flavor; but, these Salesman delivered Chattanooga lemon cookies, changed my mind. I’ve heard that your taste buds change every seven years…well, these cookies came at the right time because they started me on the road to enjoying the lemon flavor. However, the lemon flavor I enjoyed was usually combined with sugar and flour.
Fast forward to me feeling sluggish and needing a nap almost every day after my lunch, even after having intentionally gotten rid of over 100 pounds of excess weight. After every lunch, I thought I had to have something sweet – now it wasn’t a big something; but, I felt I had to have a sweet to finish my meal. It could be half of a cookie, and that added to the flour I’d eaten in the form of bread or pasta, and Mama needed a nap. Mama being me. When I made the connection that the sugar and flour were contributing to my crashes, I became open to Audra’s Trim Healthy Mama lifestyle.
Then when The Salesman needed to change his diet, I was already set up as sugar-free and gluten-free. And here I am today a Trim Healthy Mama affiliate and trying new recipes in my Trim Healthy Test Kitchen and reviewing them so you can enjoy them, too!
Meadow’s Lemon Coconut Truffles are delicious. I am still enjoying the lemon flavor and it may have influenced my choice of selecting a lemon dessert to share. The recipe is quick and easy and makes an appetizing dessert that could be placed in a box and delivered to a shower or party. They are just the cutest and tastiest little treats. I give them a thumbs up and as The Salesman tried one, he nodded his head as he ate it – which is a good thing. So, two thumbs up from us!
