We were invited to our friend James surprise party where his lovely wife told me in advance that there was going to be a gluten-free, but sugar laden birthday cake. Though our friends are very healthy, and the cake was going to be gluten-free, it was going to be made with sugar and served with ice cream. That combination could be temptation for anyone who struggles with blood sugar issues, so, I decided to make a gluten-free and sugar-free dessert to enjoy before heading to the party so that we wouldn’t be tempted when we arrived. I say we because, well, we can both be tempted and influenced greatly by the people and situations we are around. So, I prepared The Salesman’s dinner right before we left the house and also decided I would take pictures at the party instead of being a cake consumer! We had a really good time at the party and we both passed on cake and ice cream. The sugar dilemma was averted by a good plan! When I intentionally got rid of my weight, planning played a key part in my journey. Like the Scouts, it was always good to be prepared. If you aren’t prepared, it’s easy to answer *yes* to foods that can call your name.
If you have five minutes Mamas, you can whip up the Volcano Mudslide Muffin in a mug in your microwave. It is chocolatey and delicious and gooey just like the recipe said it would be. I added a non-dairy almond milk whipped topping and a few organic berries and pecans to the top. It looked and smelled delicious and after tasting, I can say it was a winner from all aspects. And, it is gluten-free and sugar-free and may even be prepared with a dairy-free option! You might be thinking, what is it made of – fairy dust?

It’s a delicious recipe to try Mamas! And, you can use your favorite on-plan sweetener! I did use the THM Gentle Sweet and I even put a fourth cup of frozen raspberries in the batter though the recipe called for fresh berries. And, I am saving the best for last, The Salesman said, “It is really good.”
