This the easiest recipe I’ve ever made because there are only two ingredients and all you do is put them in the crockpot. And the two ingredients are in the title of the recipe: Salsa and Chicken. Easy Peasy. Salsa Chicken is good for a family dinner and will give you ample leftovers for another meal, or it’s great to serve to a crowd. When the girls were in grade school I had Salsa Chicken in the recipe rotation because it was a quick and easy meal to have ready to eat as soon as we came in the door from baseball or soccer practice. It tastes great, too!
Lora’s Salsa Chicken Recipe:
2 1/2 pounds boneless, skinless chicken breasts or tenderloins – I bought frozen tenderloins at Aldi
1 (24 ounce) jar of salsa – I bought the Medium Casa Mamita Chunky Salsa at Aldi; but, buy your favorite salsa.
- Place the chicken in the crockpot. I always rinse my chicken first, it’s just what I do.
- Add salsa and cover and cook on low for 6-8 hours. Or if you are in a hurry, cook on high for 3-4 hours.
- Before serving, use two forks to shred the chicken.
Toppings:
Avocado
Cheese
Cilantro
Garlic
Hot Sauce
Lime
Onions
Peppers
Sour Cream
Serve with any of the following accompaniments:
Corn or flour tortillas
Joseph’s Pita’s or Lavash bread
Rice
Black, or Refried, Beans
Queso and Chips
Salad
Salsa Chicken would be good in burritos, tacos, or on a salad.
