If you are looking for a healthier version of macaroni and cheese, you’ve got to try Macafoni and cheese. Sometimes the THM recipe titles crack me up; but, then I sample the dish and think, yes, the mamas have done good!

It’s a really good alternative to the Blue and Yellow box comfort food I grew up on and it’s tasty, without the guilt or the carb crash! I even thought the final dish looked like mac and cheese from my growing up years.  Thumbs up from me.  For some reason unbeknownst to me, The Salesman would not try this Macafoni…  The second time I added cayenne flakes and garlic to his and he still left it on his plate..

I thought the flavor, texture, and taste were delicious!  Try this recipe Mamas!

Trim Healthy Mama Macafoni and Cheese recipe:

Ingredients:
*32 oz frozen cauliflower (2 bags frozen or 1 large fresh head)
*6 oz cream cheese (1/3 less fat)
*1/4 cup heavy cream
*3/4 cup unsweetened almond milk
*1 cup water
*1 tsp Dijon mustard
*mineral salt (to taste)
*black pepper (to taste)
*2 cups cheddar cheese (shredded or grated)
*THM Glucomannan (“gluccie”) (optional)

Instructions:
*Steam either the frozen cauliflower, or the large fresh cauliflower until ½ way to tender.

Cut the ⅓ less fat cream cheese into small pieces and set aside.

*Heat the heavy cream, unsweetened almond milk, and water in saucepan.

*Once liquid begins to simmer, whisk in the Dijon mustard and add sea salt and pepper to taste.

*Add cut up cream cheese to saucepan, along with the shredded or grated cheddar cheese.

*Add cauliflower pieces to sauce and simmer until pieces are fully tender and cheese sauce is nice and bubbly. (If sauce is not thick enough for your liking, sprinkle in some glucomannan from a salt shaker and whisk vigorously until your desired thickness).
